Aici in Suedia inca avem zapada (multisoara) si primavara nu-si va face aparitia decat prin aprilie. Si colac peste pupaza, astia de dedesubt au plecat in concediu sau aiurea iar apartamentul de sub noi e sloi de gheata. La asa conditii vitrege se cerea de urgenta ceva care sa ne incalzeasca. Mai ales ca bucataria e cea mai calda camera la ora actuala.<br /><br />Asa ca am trantit o shepherd's pie, sau pe romaneste spus o placinta a ciobanului. Nu are nici o treaba cu vreo placinta, e fix carne tocata cu piure de cartofi, de ce i-o fi spus asa ma depaseste, insa mai multe detalii gasiti <a href="http://en.wikibooks.org/wiki/Cookbook:Shepherd%27s_Pie">aici</a>. <br /><br />Exista zeci de variante ale acestei "placinte". Eu am ales sa o fac a la Gordon. Ramsey. A facut si un video rapid pentru "The F Word" si mi s-a parut mie ca ia uite domnule ce repede se face shepherd's pie-ul asta, hai ca fac si eu. Nu a fost chiar asa de rapid, dar nu m-am suparat dat fiind frigul mai sus mentionat.<br /><br />A iesit deosebit de gustoasa, o adevarata comfort food dupa cum o numesc unii. Pentru cei ce nu sufera carnea de miel/oaie se poate inlocui cu carne tocata de porc/vita. <br /><br />Am folosit:<br /><br />- 500gr carne tocata de miel (vita/porc)<br />- 2 linguri ulei<br />- 1 ceapa mare<br />- 1 morcov mare<br />- 2 catei usturoi<br />- 1-2 linguri sos Worcestershire<br />- 1 lingura pasta de tomate<br />- 1 pahar vin rosu<br />- 300 ml supa de pui<br />- cimbru si rozmarin<br />- sare si piper<br /> <br />Pentru piure:<br />- 1kg cartofi<br />- 50 gr unt<br />- 2 galbenusuri<br />- parmezan ras<br /><br /><a href="http://s701.photobucket.com/albums/ww14/poppyplanet/?action=view&current=1_2-47.jpg" target="_blank"><img src="http://i701.photobucket.com/albums/ww14/poppyplanet/1_2-47.jpg" border="0" alt="Photobucket"></a><br /><br />Cartofii se pun la fiert in apa cu sare.<br />Se pune uleiul la incins in tigaie. Se adauga carnea tocata si se tine 2-3 minute la foc mare pana se rumeneste. Morcovul si ceapa se dau prin razatoare (sau se taie cat mai fin <br />posibil) si se adauga peste carne. Se preseaza cartofii fierti, se pune untul si galbenusurile, se sareaza si pipereaza si se amesteca cu putere. Unii o considera chiar regina branzaturilor si este nelipsita de pe mesile suedezilor in prag de sarbatori.<br />Este produsa in mod exclusiv in regiunea Västerbotten de catre o singura firma producatoare, din lapte de vaca. Are o textura usor granulata si un gust pronuntat. De fiecare data cand intru intr-o librarie, cu scop clar precizat sau fara vre-un scop anume, ies cu o asemenea carte cumparata. Si nu pot spune ca sunt tocmai ieftine... <br />Oricum, ultima achizitie o reprezinta <a href="http://www.adlibris.com/se/product.aspx?isbn=9197627909">"Under valnötsträdet"</a> (Sub nuc), de Anna Bergenström si Fanny Bergenström.<br /><br />Anna este o foarte populara si indragita jurnalista si scriitoare suedeza si a scris in jur de cincisprezece carti culinare, iar in 2002 a fost numita chiar profesor in arta culinara suedeza. Fanny este fiica sa, fotograf si jurnalist de profesie. Colaborarea dintre mama si fiica se pare ca a avut succes daca e sa ne luam dupa popularitatea cartii. <br /><br />Reteta asta mi-a atras atentia in mod deosebit, eu dorind de foarte multa vreme sa incerc o supa de rosii. La inceput am fost putin sceptica, dat fiind ca pe vremea cand eram mica nu suportam rosiile in supe, ciorbe sau alte asemenea. Le dadeam la o parte imediat. De altfel ca si in franceza (fromage) sau engleza (cheese). Branza noastra, de oaie, de vaca sau de ce-o fi ea se numeste peste tot cottage cheese :) Asta am inteles-o cand am venit in Suedia pentru prima data si ii dadeam eu in sus si in jos cu "Mai da voi nu aveti branza?", ca vroiam branza dulce de vaca si am fost dusa la raionul cu muuult cascaval: "Uite aici cata branza este!" iar eu o tineam pe a mea ca aia nu e branza :)<br /><br />Anyway, suedezii indragesc foarte mult acest tip de branza, iar unii il considera drept regina branzeturilor. <br />In curand voi face si eu prima mea västerbottenpaj si voi explica mai multe :) <br />Pozele sunt de la un restaurant, unde am servit celebra tarta ca si aperitiv, cu smantana, ceapa rosie tocata si icre rosii. <br /><br /><a href="http://s701.photobucket.com/albums/ww14/poppyplanet/?action=view¤t=4_2-37.jpg" target="_blank"><img src="http://i701.photobucket.com/albums/ww14/poppyplanet/4_2-37.jpg" border="0" alt="Photobucket"></a>Poppyhttp://www.blogger.com/profile/13693527844715685873noreply@blogger.com17tag:blogger.com,1999:blog-321416637139127678.post-41164805938209584042010-08-23T15:51:00.002+02:002010-08-23T15:53:48.960+02:00Petrecerea racilor - kräftskiva<a href="http://s701.photobucket.com/albums/ww14/poppyplanet/?action=view¤t=1_2-42.jpg" target="_blank"><img src="http://i701.photobucket.com/albums/ww14/poppyplanet/1_2-42.jpg" border="0" alt="Photobucket"></a><br /><br />Pe toata durata lunii august suedezii sarbatoresc, ori de cate ori au ocazia, kräftskiva, sau pe romaneste spus, petrecerea racilor (creveti mari). <br />Este o traditie care isi are radacinile in Suedia (in trecut, sezonul racilor incepea vara tarziu), insa care, in zilele noastre se tine in toata Scandinavia.<br />In ce consta ea? Pai se mananca raci fierti, in cantitati destul de mari, stropiti din plin cu snaps si acompaniati de cantece de pahar. Se pot servi alaturi paine prajita cu unt, diverse salate sau tarte specifice (västerbottenpaj). <br /><br />Un detaliu ce merita mentionat este ca suedezii nu se limiteaza la a manca coada racilor si eventual carnita din clesti, ci sug de-a dreptul "animalul" in dreptul stomacului, ingurgitand toate sucurile aferente.<br />Eu personal am incercat o singura data, dar oricat de mult as iubi eu fructele de mare si alte de-astea, nu am putut duce la bun sfarsit misiunea cu suptul, ci m-am limitat la coada :) <br /><br />Alte accesorii specifice petrecerii sunt palarioare de hartie, ca acelea pentru zilele de nastere si lampioane de hartie. In mod normal, petrecerea are loc afara, iar cand se lasa seara se aprind lampioanele atarnate in copaci, iar atmosfera devine una mirifica. Este una dintre petrecerile unde consumul mare de alcool este social acceptat si chiar incurajat, chiar daca are loc intr-o tara unde statul detine monopol pe alcool :)<br /><br />Racii se gasesc de cumparat gata fierti si impachetati la supermarket, in cutii speciale. Dar e vorba despre Jamie Oliver si nimic nu ma mira. Daca el spune ca aceasta combinatie merge de minune, atunci trebuie sa mearga! <br />Si a mers atat de bine incat am facut reteta doua zile la rand :) Pentru cei care doresc sa stie, reteta este din cartea "Acasa la Jamie", unde el da ingredientele pentru 4 portii.<br />Eu am facut numai 3 portii ca nu imi incapeau toate cele in tava. Iar apropo de mancat sanatos si mai putin caloric, au iesit 490 calorii per portie!<br /><br />Am folosit:<br /><br />- 3 fileuri de cod (375gr)<br />- 3 fire praz<br />- 1 lamaie<br />- 140gr bacon<br />- 3 linguri ulei de masline<br />- rozmarin, cimbru si foi de dafin<br />- sare, piper<br /><br /><a href="http://s701.photobucket.com/albums/ww14/poppyplanet/?action=view¤t=1_2-41.jpg" target="_blank"><img src="http://i701.photobucket.com/albums/ww14/poppyplanet/1_2-41.jpg" border="0" alt="Photobucket"></a><br /><br />Prazul se spala, se curata si se taie in bucati potrivite, dupa care se opareste intr-o oala cu apa sarata pentru 3 minute. Situatia ideala ar fi sa aveti cimbru si rozmarin proaspete, iar prin pisare, sarea sa capete o culoare verzuie, toate aromele combinandu-se intre ele. La mine situatia a fost departe de a fi ideala (sic!) asa ca am folosit mirodenii uscate. Da, sunt "la dieta", cum ar spune multi. Eu consider insa ca am adoptat un mod de alimentatie sanatos. Si din acest motiv am cam evitat sa mai gatesc in stilul traditional si sa mai postez pe blog. Trebuie sa mentionez ca am inceput prin ianuarie.. nu-mi aduc exact aminte cand, iar pana in prezent, cu o pauza de o luna jumatate, am dat jos 8 kilograme. Am mancat sanatos, dar am avut si mici scapari. Acum sa nu-si inchipuie nimeni ca oi fi cine stie ce umflata (nu ca asta ar fi rau.., dar ma gandesc la sanatate) dar cand am venit in Suedia eram slabanoaga tare de tot si ma simteam bine! Vreau din nou :)<br />Asa ca mama, stai linistita ca nu ma infometez, mananc sanatos si destul de mult! 8 kilograme in 4 luni este mai mult decat lejer, asa ca nu-ti fa griji! :) Ok?<br />Apropo, acum fug sa fac grisine cu pesto si sun-dried tomatoes, ca e meci si vezi Doamne, merg bine cu berea... dar nu pentru mine! Daca nu incape toata cantitatea dintr-o data, adaugati rand pe rand, pana ce toate frunzele s-au inmuiat.<br />Se sareaza, se pipereaza si se adauga boia dupa gust. Ieri am avut 26 de grade la soare, iar eu ma bucur ca un copil mic, deoarece am tanjit dupa caldura foarte<br />multa vreme. Un alt motiv pentru care ma bucur este ca, odata cu caldura, imi scade si mie pofta de mancaruri grele, cu sosuri fel de fel, cu grasimi, mancaruri dintr-alea care alina sufletul si tin "de cald".<br />Iar reteta asta cu dovlecei se afla la polul opus. Tartele cu capsuni reprezinta un clasic al meselor de <a href="http://poppy-planet.blogspot.com/2009/06/midsommar.html">Midsommar</a>. <br />Sezonul capsunilor in Suedia (da, Suedia este o tara in care se cultiva capsuni) dureaza din mai pana in septembrie, timp in care se produc circa 20.000 tone de capsuni. <br />Toate sunt pentru consum intern si nimic nu merge la export. Asa scria pe punga, Fidelini, insa nu este asa fina si subtire ca si fideaua noastra.
